Now taking reservations for August, Kota Damansara's new Carbon offers one of 2023's most promising Malaysian restaurant experiences - its founders seek to build a team of chefs with passion and purpose, letting their talents and skills shine via meaningful, memorable meals.
On a recent test run, Carbon fired up a chef-driven multi-course dinner with plenty of aged protein, their potently developed flavours deepened with the dynamics of charcoal cooking.
The launch menu was being fine-tuned when we visited. Star ingredients might span Sekinchan flower crab to sea snail chowder with roasted slow-braised cauliflower to crystal-eyed catfish with coconut.
Other highlights of our meal comprised three-day aged Japanese akami with calamansi and herbs, wagyu beef on potato pave with cured yolk, king tiger prawns with somen in fish broth, momo yakitori with pickles, duck breast with pumpkin, plus intensely decadent desserts that showcased berries and pineapples.
Savoury courses conclude with Carbon's signature donabe, a hearty and soulful Japanese-inspired pot of rice served with the chef's selection of the week, such as crispy sakura ebi.
