Chakhchoukha, Algiers, Algeria

Spices play a spectacular role in the cuisine of Algeria; one fiery recipe that we loved in this North African nation's capital, Algiers, is chakhchoukha, a stew of diced lamb fired up with ras el hanout, caraway, cumin, red chillies and black pepper, consumed with semolina flatbread to be hand-torn and mixed with the meat.
