The best Spanish restaurant in London?

I got nothing but love for Spanish cuisine, in fact, I think it is the best cuisine in the world. Fresh, flavorsome and full of diversity, hence it is mostly the reason why Spain has always been my top travel destination for holiday. These days, there are plenty of decent Spanish restaurants in London, from the Michelin starred Barrafina to the tapas heaven Jose. Sabor is the new kid on the block, opened by ex Barrafina's head chef Nieves Barragan and has already created a massive storm and becoming one of the hottest London restaurants opening this year. Sabor contains two floors, with the downstairs area is for walk-in only while the upstairs restaurant space "Asador" is bookable with a more extended menu with some big sharing dishes.

Between a party of four, we opted for some tapas dishes and two mains to share. The house classic Pulpo a Feira was wonderful, an octopus dish that was boiled in a stock before finishing on the grill. The octopus was so tender and was finely seasoned with paprika. The Frit Mallorquín, it contains chopped lamb leaver, kidney and heart. It was pan-fried with herbs, peppers, and olive oil, really rich in flavour with a soft earthy aftertaste. The market fish of the day was a giant red palometa, cooked whole on the grill. The fish was so moist and cooked to perfection, the sauce was a blend of white vinegar and garlic, which really lifted up the lovely umami taste of the fish. Last but not least was the Segovian suckling pig, with lovely crispy skin and super tender meat, it was heavenly.

Service on the day was excellent, all the serving staff was very warm and welcoming.
The meal at Sabor was a pure joy, every dishes were executed wonderfully. While it wasn't cheap, I had the best ever Spanish meal in London and I would be more than happy to return in the future. Simply put, if Michelin guide thinks Barrafina is worthy of a Michelin star, then Sabor totally deserves one too. Granted that you can find better Spanish restaurants back in Spain and usually would be cheaper, but you will be saving time and traveling cost if you seek a really top level Spanish meal in London.
